Chestnut Roast

Serves 3 or 4

Ingredients

  • 200g chestnuts
  • 100g cashew nuts
  • 100g red lentils
  • 1/2 a tin of chopped tomatoes
  • A very small handful of rolled oats
  • Salt (or crumbled stock cube) and Pepper
  • A dash of boiling water, just enough to mix up to a very firm 'stodge'.

    Method

    1) Boil lentils in a pan of water for about 15 minutes.

    2) Put nuts in a blender until blended.

    3) Put in a bowl with lentils and tomatoes, season and add oats and water.

    3) Press mixture into a greased loaf tin and cook for about 40 minutes at 200ºC/400ºF until solid and browned.
