Linguine with Okra and Mushroom in Tomato Sauce by Andi
Ingredients
Method
1) Cut and gently fry the onion for 3-4 minutes.2) Slice the garlic thinly (do not use garlic press) and add to the onions.
3) Start to cook the pasta as per instruction on the packet
4) Cut the top and tail of the okra and cut into inch long segments.
5) Add the Okra to the pan and let cook for about 6 minutes (gentle heat)
6) Chop the mushrooms into quarters (chunky pieces) and then add to the pan.
7) Open the tin or tins of tomatoes and blitz in a mixer with the herbs (dried or fresh) and also add a few splashes of the vinegar and the juice of a lemon.
8) Add the blitzed stuff to the pan and let simmer for 3-5 mins and also add a squirt of tomato puree for thickness and colour. Drain the linguini and spoon onto the serving bowls/plates and then spoon on the Okra and mushroom sauce. Try topping of Vegan Parmesan cheese. Serve with a fresh salad and garlic bread and a good red wine.
