Chocolate Yule Logs

Ingredients

  • 3 mug of self raising flour
  • 1 mug of caster sugar
  • 1 mug of demarara sugar
  • 3 or 4 tablespoons of cocoa
  • A very small pinch of salt
  • 1/4 teaspoon white wine vinegar
  • 1 1/2 teaspoons of vanilla essence
  • 10 tablespoons of vegetable oil
  • About 1 1/2 mugs of cold water

    To decorate:

  • Marzipan
  • Vegan plain chocolate, melted (or chocolate icing)

    Method

    1) Put the dry ingredients in a bowl and mix.

    2) Add all the wet ingredients and beat well.

    3) Pour into a shallow baking tin (7" x 11") and bake for about 30 minutes at 180-200ºC/375-400ºF.

    4) When the cake has cooled, cut it into 'bars'.

    5)Roll each in marzipan, then dip in melted chocolate. Mark on bark details with a cocktail stick and leave on a plate to set.
