Apple and Cinnamon Layer. by Ali Bromley (Rugby Vegans)

I adapted this recipe from my old Be-Ro book to use up a glut of apples but it works well with other seasonal fruits (rhubarb, blackberries etc)

Ingredients

  • 1 packet CO-OP Suet Dumpling mix.
  • 1lb apples.
  • 2oz sultanas.
  • 1 tsp cinnamon.
  • Sugar to sweeten (optional).

    Method

    1) Make up dumpling mix to make the dough according to instructions (add water).

    2) Roll dough out on a floured board and divide into four circles each one a bit larger than the last.

    3) Peel and slice apples, mix with sultanas, cinnamon and sugar.

    4) Grease a 2 pint pudding basin, place the smallest circle of pastry in the bottom, add a layer of fruit mixture and continue finishing with a layer of pastry.

    5) Cover and steam for 2 hours (I do mine in a steamer, checking intermittently that the steamer hasn't run dry).

    6) Turn out and serve with soya cream, soya custard or Swedish Glace.
