Apple and Cinnamon Layer. by Ali Bromley (Rugby Vegans)
I adapted this recipe from my old Be-Ro book to use up a glut of apples but it works well with other seasonal fruits (rhubarb, blackberries etc)

Method
1) Make up dumpling mix to make the dough according to instructions (add water).2) Roll dough out on a floured board and divide into four circles each one a bit larger than the last.
3) Peel and slice apples, mix with sultanas, cinnamon and sugar.
4) Grease a 2 pint pudding basin, place the smallest circle of pastry in the bottom, add a layer of fruit mixture and continue finishing with a layer of pastry.
5) Cover and steam for 2 hours (I do mine in a steamer, checking intermittently that the steamer hasn't run dry).
6) Turn out and serve with soya cream, soya custard or Swedish Glace.
