Avocado Pasta by Andrea from Rugby
This is great served with ciabatta and an olive salad.
Ingredients
2 tablespoons of olive oil.
1 large avocado.
Handful of almond flakes.
Salt & pepper
Pasta
Method
In a hot, unoiled pan, toast the almond flakes until they are nicely
browned. Meanwhile cook the pasta. Peel stone and dice the avocado. Once
the pasta is cooked add the avocado, oil and nuts. Serve immediately.
