Potato & Carrot Soup by Top girl Karin

Serves 3-4

Ingredients

  • 1 and a half pounds of potatoes
  • 1 pound of carrots
  • 1 medium onion
  • 3 oz vegan margarine
  • 1 teaspoonful raw cane sugar
  • 2 pints water
  • Sea salt and freshly ground black pepper to taste
  • A little grated nutmeg
  • Chopped parsley

    Method

    1) Peel the potatoes and cut them into slices. Slice the onion and carrots.

    2) Melt half the margarine, add the onion and cook until softened but not brown.

    3)Add the potatoes and carrots and stir well.

    3) Add the sugar and a little salt, then add the water and cook until the vegetables are tender.

    4) Cool slightly, then put into a liquidizer and puree.

    5) Return the soup to the pan, reheat and season to taste. Stir in the remaining margarine and a little freshly chopped parsley.
