Vegan Sour Cream by Soo
Ingredients
250g tofu (silken is best)
75ml sunflower oil
100ml soya milk
25ml vanilla essence
45ml lemon juice
2 teaspoon soya sauce
1/2 teaspoon mustard powder
25ml maple syrup (optional)
Method
Place all the ingredients in a blender and blend to produce a thick
cream. Transfer to glass jars and store
until needed. For savoury dishes, omit the maple syrup and add salt &
pepper if liked, or fresh chopped
chives.
