Roast Aubergine and, courgette and tomato thing. by Glen

Variation on something I ate out once...

Ingredients

  • 8-10 Chopped sun dried tomatoes.
  • Medium/large Aubergine.
  • 1 large courgette.
  • 4 medium sized tomatos.
  • 1 large Clove of garlic.
  • Extra virgin olive oil.
  • Salt and pepper.

    Method

    Take the sun dried tomatoes Put in a small saucepan with olive oil and coarsely chopped clove of garlic and a little pepper. Enough oil to cover the tomatoes. I'm not sure if this all helps but I heat the oil and leave to cool/marinate for a while (hours/overnight/whatever).

    Take the Aubergine, courgette and tomatoes. Chop all up into about half inch cubes and put in a roasting dish with lots of salt and pepper.

    Cover with the tomato oil. May need a tad more oil to cover all vegtables.

    You can slow roast or roast and then fry off to finish or roast and fry the left-overs next day...

    Great in a sandwich or on some kind of bread or on its own.
